Garlic and Butter Flatbread
Ingredients
-
350g all-purpose flour (plus extra for dusting)
-
250g plain yogurt (Greek or regular)
-
1 tsp baking powder
-
1 tsp salt
-
1 tsp sugar
-
2 cloves garlic
-
30g unsalted butter
-
Optional: a little oil for cooking
Preparation
1. Make the Dough
Sift the flour into a large mixing bowl. Make a well in the center and add the yogurt, baking powder, salt, and sugar. Using a spoon or your hands, start mixing from the center and gradually pull the flour in from the sides. Keep mixing until a soft dough forms.
2. Knead and Rest
Transfer the dough to a lightly floured surface and knead for a few minutes until smooth and elastic. Divide the dough into 8 equal pieces and roll each into a ball. Cover them with a clean kitchen towel and let them rest for 5–10 minutes so they don’t dry out.
3. Roll Out the Flatbreads
On a floured surface, roll each dough ball into a thin round, about 2–3 mm thick. To prevent sticking, you can separate each rolled-out flatbread with a sheet of baking paper.
4. Cook the Flatbreads
Heat a non-stick skillet over medium-high heat (about level 7–8 out of 9). Lightly grease the pan with a little oil if you like. Cook each flatbread for about 1 minute on each side, or until golden spots appear and it puffs slightly. Flip and cook the other side. Transfer to a plate and keep warm under a clean towel.
5. Add the Garlic Butter
While the flatbreads are still warm, brush each one generously with melted butter. Peel the garlic cloves and either rub them directly onto the warm bread or finely chop the garlic and sprinkle it over the top. The heat will gently soften the garlic and release its aroma into the butter.
